Turned off the mic on my dash cam the first time I reviewed footage and heard myself talking, haha. What’s the etiquette here? Kinda weird to be recording every conversation in your car without the other parties knowing. Even if they knew...a little creepy.

I tend to assume that people in my car don’t think I’m (that) creepy and some trust that I won’t hang on to random audio for nefarious purposes.
Strictly speaking it may be illegal though, if you are in a two- party consent state:
These states generally require that all parties consent to recording. I operate on the assumption that my dashcam is in plain view of the passenger, with a recording light, and makes a noise when in boots up, so that any (at least front seat) passenger would know they are being recorded, and give their implicit consent, though I don’t know how that would hold up in court (I assume it would be a bit like the standard “this call may be recorded” disclaimer) . It’s a little less clear in situations where you have a mechanic or valet or whoever driving, so there isn’t even one-party consent (which could get you in trouble everywhere), I think the best argument you can make is that they shouldn’t have any expectation of privacy in your car. I haven’t heard of any cases going to court though.

Haha, I don’t think you or anyone else is creepy for leaving the mic on and no I don’t think most people would hang on to that data . I just think the notion of being constantly recorded in your own car is creepy.
I am actually in a two part consent state (PA), so good thing that is off then!
I also have tape over my recording light because I don’t like blinky lights.

I’m not bothered by the constant recording. I do worry if I capture something cool, it will have an embarrassing song playing in the background (both making me look foolish, and making Youtube posting more problematic). I did use my dashcam to capture a suspicious sound and share it with my mechanic , so that was useful, and wouldn’t be possible with the mic off.
